Here is a simple recipe of a Welsh favourite:
1. 1 Cup Sugar
2. 4oz hard marg
3. 1 cup milk
4. 12oz Mixed Fruit
5. 2 Eggs
6. 8oz S.R. Flour
7. Teaspoon Mixed Spice
8. Pinch of Salt
Boil 1, 2, 3, 4 in a saucepan for 5-6 minutes. Allow to
cool. Add 5, 6, 7, 8 to the cooled mixture and mix well.
Place in 8oz loaf tin (or two tins for non fan assisted
ovens) pre-greased. Cook at Gas 2.5 or 300F/150°C for 1½
hours at the top of the oven (if not fan assisted). Slice
and serve with butter ? enjoy!
